Quinoa in a new starring role

Quinoa, a sacred staple of the ancient Incas, grows beautifully at altitude, so it is now grown here in the Rockies. It is considered a complete protein by some and does have a lot of the essential amino acids. It cooks very quickly and I have found it in white or red. The red is very pretty in the Sprouted Lemon Poppyseed bars I’m suggested below.

I have made this bread and it is wonderful.

Instead of poppyseeds, I used chia seeds. Try it out and check out Julia’s other great recipes on her blog. Sprouted quinoa is delicious on its own as a snack, so try it! What a great and healthy food.
